Coconut Cookies

Baking Time: 25-30 minutes
Temperature: 325°

Yields: 8 dozens

  • 1 lb. butter
  • 1/2 c. margarine
  • 1 1/2 c. sugar
  • 6 1/2 c. flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla
  • 2 c. grated coconut (fresh)
  1. Cream the butter, margarine, and sugar.
  2. Sift the dry ingredients and add to the butter mixture.
  3. Add vanilla and coconut and mix well.
  4. Form into strips and refrigerate for an hour.
  5. Slice and place on cookie sheets (slice 1/4 inch).
  6. Bake at 325° for 25-30 minutes.
