Mock Chicken Legs
- 2 eggs, beaten
- 1 clove garlic, grated
- 1 small piece ginger, grated
- 1/3 c. flour
- 1 c. cracker meal
- 1 can chicken broth
- 4 tbsp. sugar
- 4 tbsp. shoyu
- Oil for frying
- 2 lbs. pork butt
- Cut the pork into cubes and soak in: 2 eggs, ginger, and garlic.
- Soak for at least 3 hours.
- Roll the pork in the dry mixture (flour and cracker meal).
- Deep fry either individually or on skewers.
- Simmer for 30 minutes in mixture of chicken broth, sugar, and shoyu.
