Coconut Cookies
Baking Time: 25-30 minutes
Temperature: 325°
Yields: 8 dozens
- 1 lb. butter
- 1/2 c. margarine
- 1 1/2 c. sugar
- 6 1/2 c. flour
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. vanilla
- 2 c. grated coconut (fresh)
- Cream the butter, margarine, and sugar.
- Sift the dry ingredients and add to the butter mixture.
- Add vanilla and coconut and mix well.
- Form into strips and refrigerate for an hour.
- Slice and place on cookie sheets (slice 1/4 inch).
- Bake at 325° for 25-30 minutes.
