Oven Baked Chicken and Rice

Serves: 4

  • 8 chicken thighs or 1 pkg. of 1 1/2 lbs. drummettes
  • 1 can cream of mushroom soup
  • 1 can whole milk (use soup can)
  • 3/4 c. uncooked rice, washed
  • 1 (4 oz.) can mushrooms (stems and pieces-save liquid)
  • 1 envelope dry onion soup mix

  1. Blend the soup and milk – reserve half of the mixture.
  2. Stir the remaining soup mixture, rice, mushrooms with liquid, and half of the dry onion soup mix.
  3. Pour the mixture into an ungreased baking dish.
  4. Arrange chicken on the rice mixture.
  5. Pour the reserved soup mixture over the chicken and sprinkle with remaining dry soup mix.
  6. Cover and bake at 350º for 1 1/2 hours.
  7. Uncover for the last 15 minutes.

NOTE: Fast and easy to make for a family of four!
