Clam Crunch

  • 1/4 c. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tbsp. parsley, snipped
  • 1 – 6 1/2 oz. can minced clam
  • 1 egg
  • 1 3/4 c. Rice Chex cereal
  • Oil for frying
  1. Combine flour, baking powder, salt, pepper and parsley.
  2. Drain clams and reserve the liquid.
  3. Slowly stir liquid into dry ingredients until smooth.
  4. Add minced clams and mix well.
  5. Stir in Rice Chex cereal and let stand for 10 minutes.
  6. Heat oil in skillet (approximately 1/2 inch deep.)
  7. Drop one heaping tablespoonful of the clam mixture into the hot oil.
  8. Pat with spoon to form a patty. Repeat to form more patties.
  9. Brown over medium heat; turn and brown.
  10. Drain and serve immediately.
