Clam Crunch
- 1/4 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 tbsp. parsley, snipped
- 1 – 6 1/2 oz. can minced clam
- 1 egg
- 1 3/4 c. Rice Chex cereal
- Oil for frying
- Combine flour, baking powder, salt, pepper and parsley.
- Drain clams and reserve the liquid.
- Slowly stir liquid into dry ingredients until smooth.
- Add minced clams and mix well.
- Stir in Rice Chex cereal and let stand for 10 minutes.
- Heat oil in skillet (approximately 1/2 inch deep.)
- Drop one heaping tablespoonful of the clam mixture into the hot oil.
- Pat with spoon to form a patty. Repeat to form more patties.
- Brown over medium heat; turn and brown.
- Drain and serve immediately.
