Siu Mai – Pork Hash

  • 1/2 lb. ground pork
  • 1/4 c. green onions, minced
  • 1/2 c. shrimp, cleaned, deveined and minced
  • 1 egg, slightly beaten
  • 1 tsp. cornstarch
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. oyster sauce
  • 1/2 tsp. sesame seed oil
  • 24 frozen green peas, optional
  • 1 pkg. wun tun pi or wrappers
  1. Combine all the filling ingredients and mix well.
  2. Fill centers of wun tun wrappers with 1 tbsp filling.
  3. Draw sides of the wrappers around the filling and squeeze lightly near the top.
  4. Garnish each siu mai with a green pea.
  5. Place in an oiled steamer.
  6. Steam dumplings for 20 minutes.
  7. Serve with shoyu and mustard. (Dry mustard mixed with water.)

NOTE: Chinese fishcake (1/2 c.) may be substituted for shrimp.
