Steamed Duck w/ Assorted Nuts
- 1 fresh duck (5 or 6 lbs.) washed and cleaned.
Dressing:
- 1 cup ham, diced
- 1 cup pork, diced
- 1 cup lotus seeds, boiled and cleaned
- 1 cup bamboo shoots, diced
- 1 cup mushrooms, diced
- 1 cup chestnuts
- 1 cup whitenuts (ginko nuts)
- 1 tsp MSG
- Hawaiian salt to taste
Fry pork and ham for a few minutes. Simmer all remaining ingredients until tender. Fry duck in deep fat until brown. Rinse in cold water. Stuff duck with the dressing. Place duck in a large container and steam for 3 hours. Garnish with parsley.
