Steamed Duck w/ Assorted Nuts

  • 1 fresh duck (5 or 6 lbs.) washed and cleaned.

Dressing:

  • 1 cup ham, diced
  • 1 cup pork, diced
  • 1 cup lotus seeds, boiled and cleaned
  • 1 cup bamboo shoots, diced
  • 1 cup mushrooms, diced
  • 1 cup chestnuts
  • 1 cup whitenuts (ginko nuts)
  • 1 tsp MSG
  • Hawaiian salt to taste

Fry pork and ham for a few minutes. Simmer all remaining ingredients until tender. Fry duck in deep fat until brown. Rinse in cold water. Stuff duck with the dressing. Place duck in a large container and steam for 3 hours. Garnish with parsley.
