Shrimp Quesadillas

  • 2 cups Monterey Jack Cheese, grated
  • 1 cup Cooked Shrimp, chopped
  • 1/2 cup Green Onions, sliced
  • 8 Flour Tortillas
  • 4 tablespoons Vegetable Oil

Stir cheese, shrimp (or fish) and green onions together in a bowl. Spread mixture evenly over the flour tortillas and fold in half.

Heat 1 tablespoon of oil in a large skillet for every 2 tortillas. Cook over medium heat for approximately 5 minutes or until brown on both sides.

If you don’t like shrimp, you can substitute any white fish which has been sautéed in butter.
