Pavlova

  • 3 Egg Whites
  • 1 cup Sugar
  • 1/4 teaspoon Vanilla
  • 1/2 teaspoon White Vinegar

Beat the egg whites to stiff foam. Add the sugar, vanilla and vinegar. Beat for five minutes. Cut a piece of parchment paper or waxed paper to fit a cookie sheet. Pour the meringue onto the paper to form an approximately 7 inch circle.

Bake in a preheated 250° oven for 45 to 60 minutes. Cake should be dry and light colored. Let cool. When ready to serve, fill with whipped cream and sliced kiwis.

Filling:

  • 1 pint Whipping Cream
  • 1 teaspoon Powdered Sugar
  • 1 teaspoon Vanilla
  • Kiwis, peeled and sliced

Chill mixing bowl and beaters for 30 minutes prior to whipping. Pour whipping cream into bowl. Add powdered sugar and vanilla. Beat until whipping cream stands in peaks. Spread into meringue shell and top with sliced kiwis.

Strawberries may be substituted for the kiwis.
