Shrimp on Toast
- 2-3 lbs. shrimps, cleaned and deveined
- 1 can Spam
- Chinese parsley
- 2 eggs, beaten
- Oil for deep frying
- 1 loaf bread (day old preferred)
- Chop shrimps, spam and parsley very fine (or use osterizer).
- Add beaten eggs.
- Cut bread into 1 1/2 x 1 1/2 slices. (Slice each piece in thirds and thirds again.)
- Bread may be toasted before cutting, if desired.
- Spread shrimp mixture on bread and fry in deep fat until brown.
- Serve hot.
