Salmon Croquettes
- 1 1-lb. can salmon
- 1 can cream of mushroom soup
- ½ cup chopped onions
- ½ cup fine bread crumbs
- 1 slightly beaten egg
- 1 tbsp. lemon juice
Combine ¼ cup of cream of mushroom soup and the rest of the ingredients. Form into croquettes. Roll in additional bread crumbs. Fry in deep fat or pan fry. Use the leftover soup for gravy.
