Island Holiday Pie

  • 1/2 c. sugar
  • 1 can crushed pineapple, drained
  • 1 pkg. instant coconut cream pudding
  • 1 c. sour cream
  • 2 Tbsp. lemon juice

Topping:

  • 1 c. sour cream
  • 2-4 Tbsp. powdered sugar
  • 1 tsp. vanilla

Mix well (do not beat). Pour into prepared crust and add topping. Refrigerate at least one hour.
