Fried Eggplant

  • 1 round eggplant
  • 1 tsp. salt
  • 3 c. water
  • Black pepper, to taste
  • 1/2 c. butter, softened
  • 1 egg, beaten
  • 1 c. cracker or bread crumbs
  • Oil for frying
  1. Cut eggplant into thick slices.
  2. Soak sliced eggplant in salt and water and let stand for at least 1/2 hour.
  3. Take eggplant out of water; drain and wipe dry.
  4. Butter the slices of eggplant; dip in beaten egg.
  5. Coat with grated cracker or bread crumbs and fry until light brown.

NOTE: Inexpensive, simple, delicious!
