Fried Eggplant
- 1 round eggplant
- 1 tsp. salt
- 3 c. water
- Black pepper, to taste
- 1/2 c. butter, softened
- 1 egg, beaten
- 1 c. cracker or bread crumbs
- Oil for frying
- Cut eggplant into thick slices.
- Soak sliced eggplant in salt and water and let stand for at least 1/2 hour.
- Take eggplant out of water; drain and wipe dry.
- Butter the slices of eggplant; dip in beaten egg.
- Coat with grated cracker or bread crumbs and fry until light brown.
NOTE: Inexpensive, simple, delicious!
