Shrimp on Toast

  • 2-3 lbs. shrimps, cleaned and deveined
  • 1 can Spam
  • Chinese parsley
  • 2 eggs, beaten
  • Oil for deep frying
  • 1 loaf bread (day old preferred)
  1. Chop shrimps, spam and parsley very fine (or use osterizer).
  2. Add beaten eggs.
  3. Cut bread into 1 1/2 x 1 1/2 slices. (Slice each piece in thirds and thirds again.)
  4. Bread may be toasted before cutting, if desired.
  5. Spread shrimp mixture on bread and fry in deep fat until brown.
  6. Serve hot.
