Spinach Lasagna

  • Lasagna noodles
  • Spinach (fresh or frozen)
  • 2 eggs
  • Cottage cheese
  • Tomato sauce
  • Mozzarella cheese
  • Parmesan cheese

Prepare lasagna noodles according to package directions. Mix 2 beaten eggs in cottage cheese and add spinach (if frozen spinach, remove water). Grease a 9″ x 13″ rectangular pan. Place a layer of lasagna noodles, then a layer of tomato sauce, a layer of cottage cheese-egg-spinach mixture, a layer of mozzarella cheese, and repeat the layers until the pan is full. Then sprinkle Parmesan cheese on top. Bake at 350° for 1 hour. Serve with bread and salad.
