Chicken or Turkey Strata

  • 12 slices bread, cubed or torn
  • 1 cup celery, chopped
  • 1/2 cup onion, chopped
  • 2 Tbsp. butter (or margarine)
  • 1/2 cup mayonnaise
  • 3 1/2 cups diced cooked chicken or turkey
  • Salt
  • 4 eggs
  • 3 cups milk (or powdered milk and chicken broth)
  • 1 can mushroom soup
  • 1/2 cup grated cheese

Line a greased 9″ x 13″ baking dish with 6 slices of cubed or torn bread. Saute celery and onion in butter until tender. Add mayonnaise, chicken or turkey, and 1/2 tsp. salt. Mix and pour over bread. Top with another 6 slices of cubed or torn bread. Beat eggs; add milk and salt to taste. Pour over ingredients in baking dish. Refrigerate overnight.

Next day spoon mushroom soup over top and bake at 325º for 1 hour. When nearly done, sprinkle with grated cheese. Return to oven to melt cheese. Serve immediately.
