Ono Chicken Pineapple

  • 2 pkgs. chicken (preferably thighs)

Dust With:

  • 1/3 to ½ cup of flour
  • ½ tsp. celery salt
  • ¼ tsp. nutmeg
  • ½ tsp. salt
  • ¼ tsp. garlic salt

Put fry ingredients in a paper bag and shake. Add pieces of chicken and shake. Be sure all pieces of chicken are well dusted with the flour-spice ingredients. Brown chicken in frying pan using frying fat of your choice. Drain frying fat when chicken is brown then pour over the combined mixture of:

  • ¾ cup pineapple juice (or cyrup of canned chunkpineapple)
  • 2 tbsp. shoyu
  • 2 tbsp. sugar (omit if syrup is used)

Cover and simmer until tender. Before serving add:

  • 1 cup or more of canned pineapple chunks
