Chicken Gisantis

  • 5 lbs. stewing chicken
  • 1 cup water
  • 1 round onion (chopped)
  • Salt and ajinomoto to taste
  • 2 pkgs. dry mushrooms (soaked and sliced)
  • 2 tbsp. salad oil
  • 3 cloves garlic (mashed)
  • 2 cans tomato sauce
  • 1 can bamboo shoots (sliced)
  • 2 cans pimentos (sliced)
  • 2 cans peas

Chop chicken into small pieces and put in a deep pot to brown. Add water and cook for 1½ hours. Remove chicken and pour liquid in a bowl. Into pot pour salad oil. Fry garlic and onion, add tomato sauce and salt and ajinomoto to taste. When onions are transparent, put cooked chicken and liquid back into pot. Bring to a boil and add bamboo shoots, mushrooms, and pimentos. Simmer 15 minutes. Add peas. Heat and serve. VARIATION: Lean pork cut into slices can be used instead of chicken.
