Nachos

  • 2 oz. natural cheddar cheese
  • 24 taco-flavored tortilla chips
  • 1/2 c. refried beans OR canned bean dip
  • 1 chili pepper (mild) diced
  1. Cut cheese into 24 pieces, each measuring 3/4 x 3/4 x 1/8 inch.
  2. Arrange tortilla chips on baking sheets.
  3. Place a teaspoon of beans in center of each chip, then a piece of cheese.
  4. Top with a piece of chili pepper.
  5. Broil 4 inches from heat until cheese begins to melt, 1 to 3 minutes.
