Meat Hash

Mrs. Fumiko Segawa – Ilima

  • 1 medium onion (chopped)
  • 2 c diced left over roast meat
  • 1/4 c chopped green pepper
  • 1 T sweet red pepper (chopped)
  • 1/2 c chopped tomato
  • 2 c diced raw potatoes
  • 1 1/4 c broth
  • Salt and pepper to taste
  • Few drops of Worcestershire sauce

Cook onion in a little oil. Add meat and simmer for 10 minutes. Add the green and red peppers and simmer a little longer. Then add tomatoes, potatoes, broth, salt and pepper and cook slowly, covered, either on top of stove or in oven, until vegetables are done.
