Cheeseburger Loaf

- 1 T chopped parsley
- Left-over mashed potatoes
- 1# hamburger
- 1 c bread crumbs
- 1/2 c water
- 2 eggs
- 1 onion, chopped
- salt and pepper
- 1/2# sliced cheese
Brush an 8″ square pan with fat and sprinkle lightly with some crumbs.
Mix parsley and potatoes. Mix meat, crumbs, eggs, water and onions and seasonings. Put 1/2 of the meat mixture in bottom of pan. Cover with 1/2 of the cheese slices. Now spread with potato mixture. Repeat layer of cheese. Top with rest of meat mixture. Close edges firmly to prevent juice from escaping. Bake in moderate oven (350° F.) for about 25 minutes and turn over onto platter when serving. Serves 6.
