Flank Steak Rollies

  • 1/3 lb. salt pork
  • 1 flank steak (about 1 1/2 lb.)
  • 1/4 tsp pepper
  • 1/2 c consomme

Cut salt pork into slice about 1/3” thick. Saute slightly to fry out some of the fat. Sprinkle pepper over steak; place pork in center and roll steak over pork. Fasten the roll with skewers to make “Rollies” about 1” intervals along the seam. Slice between the skewers to make ‘Rollies” about 1” thick. Brown slices on both sides in a small amount of the pork fat. Add the consomme. Cover and bake at 350 degrees F. for 1 hour, or until tender. Thicken the gravy with flour and water paste and serve over meat. Yield: 6 servings.
