Stuffed Bitter Melon

  • 1 pound bitter melon

Filling for Bitter Melon

  • ¾ c ground pork
  • ¼ c mashed tuna, canned or any other boiled fish
  • ½ c green onion, chopped fine
  • 1 egg
  • ½ c dried shrimps
  • 1 chung choy, chopped fine
  • ½ tsp salt
  • 1 T shoyu
  • 1 tsp sugar

Soak dry shrimps in cold water 1 hour, before preparing. Combine ingredients for filling.

Cut melon crosswise into 2 inch pieces. Remove pulp and seeds from the center. Parboil for 4 or 5 minutes. Drain and run cold water through.

Stuff each piece of melon with the finely minced filling. Arrange for steaming. Simmer for 40 minutes to 1 hour.
