Hawaiian Namasu

  • 1/4 lb. salted salmon (sliced thin)
  • 5 heaping tbsp. raw sugar
  • 1 cup vinegar
  • 1 tsp. salt
  • 5 good size cucumbers – cut in chunks
  • 2 large round onions – sliced
  • 5 stalks celery – sliced diagonally
  • grated carrots – optional
  • chopped ginger – optional
  • 1 tsp. ajinomoto

Combine all ingredients and refrigerate it overnite. Serve. It could be served after 3 hours of standing. Namasu will keep for a long time, if refrigerated.
