Stuffed Bitter Melon with Pork Hash

  • 4 medium bitter melon
  • ½ lb. ground pork
  • 2 tbsp. dried shrimps or 4 fresh shrimps, chopped fine
  • 1 small piece chung choi, washed and chopped fine
  • 3 water chestnuts, chopped fine
  • ½ tsp. salt
  • 1 tsp. shoyu
  • 2 tsp. cornstarch
  • 1 bottle black bean sauce
  • ½ tsp. sugar
  • 1/8 tsp. pepper

Cut bitter melons into 1½” lengths. Remove seeds and parboil 2 minutes. Drain. Mix well remaining ingredients and stuff bitter melon sections with this mixture. Place in pot, add one bottle black bean sauce and simmer 30 minutes.
