Spicy Sausage Spaghetti

  • 1 lb. Italian sausage or linguisa
  • 2 medium onions, chopped
  • 1 large clove garlic, minced
  • 1 can (1 lb., 14 oz.) tomatoes
  • 1 can (8 oz.) tomato sauce
  • ¼ tsp. sugar
  • ¼ tsp. basil
  • ¼ tsp. oregano
  • 2 cups shredded Cheddar cheese
  • 3 cans (4 oz. each) chopped mushrooms, drained
  • 1 lb. enriched spaghetti
  • Grated Parmesan cheese, if desired

Set out 2½ quart casserole. In heavy skillet or saucepan brown sausage. Remove sausage; cook onions and garlic in drippings until onion is transparent. Stir in tomatoes, tomato sauce, sugar, basil and oregano. Add sausage to sauce.
