Spare Ribs With Pineapple
- 2 pounds spare ribs
- 1 clove garlic, crushed
- 1 1″ piece ginger, crushed
- 1 tsp. Hawaiian salt
Place in cold saucepan or pressure cooker and brown on high heat. Pour off accumulated fat. Add:
- 3 tbsp. cider vinegar
- 3 tbsp. washed sugar
- 1 tbsp. shoyu
- 1/8 tsp. 5 spices
- 1/4 tsp. ajinomoto
Cover and cook on low heat until done, about 30-40 minutes. For pressure cooker, 10 minutes at 15 pound pressure, cool immediately.
Gravy:
- 1 tsp. cornstarch
- 1/2 cup juice from small can of pineapple chunks
Mix and add to cooked spare ribs. Before serving, mix pineapple chunks with spare ribs, place on platter and garnish with Chinese parsley.
