Shrimp Fritters

  • 2 Eggs
  • 1 cup Water
  • 1/2 teaspoon Salt
  • 1 cup Flour
  • 2 pounds Fresh Shrimp
  • Oil for deep frying

Beat eggs until slightly thick. Add water and blend. Add salt and flour and mix lightly.

Shell the raw shrimp. Cut lengthwise through the back leaving the underside uncut. Remove the black vein. Dip shrimp in batter.

Deep fry in oil until brown.

Serve plain or with pineapple sauce.

Pineapple Sauce:

  • 1 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1 tablespoon Vinegar
  • 1/2 cup Water
  • 1/4 teaspoon Red Chili Pepper
  • 1 cup Pineapple Cubes
  • 1 tablespoon Cornstarch
  • 1 tablespoon Water

Combine sugar, salt, vinegar, 1/2 cup water and chili pepper in a saucepan. Heat until sugar dissolves. Add pineapple and cook 10 minutes. Mix cornstarch with water. Add to the sauce mixture and simmer for another 5 minutes.
