Shredded Mango

  • 1 doz. green hayden mangoes, cut in strips and salt overnight. rinse and drain
  • ¼ cup Hawaiian salt
  • 2½ cups raw sugar
  • 2 boxes dark brown sugar
  • ½ of orange rind (minced)
  • 1 tsp. red food coloring
  • 2 tsp. 5 spices

Put all together and cook for 1½ hours. Cool and pack in jars.
