“Conchee” ( Pickled Prunes)

Squeeze the juice of 3 lemons into a 1 quart mayonnaise jar. Add 3 tbsp. salt and 1 box prunes (1 lb.). Place a piece of wax paper over opening, put on lid and tighten. Dry in sun for 3 days or more. Shake it occasionally so that the lemon juice will saturate the prunes.
