Sauces for Teppan Yaki

PONZU

  • 1/4 c. lemon juice or rice vinegar
  • 1/4 c. shoyu
  • 1 tbsp. mirin (rice wine)
  • 2 tbsp. soup stock
  • 1 tbsp. sesame seed, toasted
  • 1/4 tsp. Ajinomoto

HOT SAUCE

  • 1/4 c. rice vinegar
  • 1 tbsp. mirin (rice wine)
  • 2 tbsp. shoyu
  • 1 1/2 tbsp. sugar
  • 1/4 tsp. Ajinomoto
  • 1 clove garlic, crushed
  • 2 tbsp. hot pepper sauce OR dry mustard

BEEF SAUCE

  • 2 tbsp. Worchestershire sauce
  • 1/2 c. catsup
  • 2 tsp. dry mustard
  • 2 tsp. lemon juice
  • 1 tbsp. mirin (rice wine)
  • 2 tbsp. round onion, grated

WHITE SAUCE (For vegetables)

  • 3 tbsp. sugar
  • 1/4 c. rice vinegar
  • 1 tbsp. mirin (rice wine)
  • 1/4 c. daikon (turnip) grated
  • 1/2 tsp. fresh ginger, grated (optional)
  • 1 clove garlic, crushed (optional)

1. The recipe for each sauce should be prepared separately.
2. Serve in individual dishes.
3. Each sauce will yield 4 servings.
