Sauces for Teppan Yaki
PONZU
- 1/4 c. lemon juice or rice vinegar
- 1/4 c. shoyu
- 1 tbsp. mirin (rice wine)
- 2 tbsp. soup stock
- 1 tbsp. sesame seed, toasted
- 1/4 tsp. Ajinomoto
HOT SAUCE
- 1/4 c. rice vinegar
- 1 tbsp. mirin (rice wine)
- 2 tbsp. shoyu
- 1 1/2 tbsp. sugar
- 1/4 tsp. Ajinomoto
- 1 clove garlic, crushed
- 2 tbsp. hot pepper sauce OR dry mustard
BEEF SAUCE
- 2 tbsp. Worchestershire sauce
- 1/2 c. catsup
- 2 tsp. dry mustard
- 2 tsp. lemon juice
- 1 tbsp. mirin (rice wine)
- 2 tbsp. round onion, grated
WHITE SAUCE (For vegetables)
- 3 tbsp. sugar
- 1/4 c. rice vinegar
- 1 tbsp. mirin (rice wine)
- 1/4 c. daikon (turnip) grated
- 1/2 tsp. fresh ginger, grated (optional)
- 1 clove garlic, crushed (optional)
1. The recipe for each sauce should be prepared separately.
2. Serve in individual dishes.
3. Each sauce will yield 4 servings.
