Salmon Croquettes

Mrs. Fusae Nakakura – Haina

  • 1 can salmon
  • 1 1/2 c mashed potato or 1 c bread crumbs or 1/2 c cooked rice
  • 1 egg
  • 1/2 tsp paprika
  • Salt to taste
  • 1 T lemon juice

Mix together and shape, using one tablespoon for each croquette. Dip in rolled dry bread crumbs, then in egg which has been beaten with 4 T. milk, and in crumbs again. Fry in deep fat, and drain on paper.
