Roast Beef Hash
- 1 cup or more leftover Roast Beef, cut up
- 1 tablespoon Oil
- 1 small Onion, chopped
- 3 Potatoes, medium size – cut up as for French Fries
- Salt
- Pepper
In a large frying pan, brown roast beef in oil. Add onions and cook until tender. Add potatoes, salt and pepper. Reduce heat, cover pan and cook until potatoes are tender and browned (about 10 to 15 minutes). Turn meat and potatoes over and continue cooking, uncovered, until well browned and crispy on bottom.
Yield: 4 servings.
