—Robert Wilson, Vice President, General Services, Wahiawa General Hospital
- 12 to 16 sour cooking apples
- 1 cup packed brown sugar
- Cinnamon to taste
- Butter
- 8 center-cut pork chops
Butter a 10″ x 15″ pan. Peel and core apples; slice as you would for a pie. Spread the apples over bottom of pan and sprinkle brown sugar over the apples. Sprinkle cinnamon over the brown sugar. Dot with small pieces of butter.
Fry and brown pork chops. Lay these on top of the apple slices. Cover with foil. Bake at 375º for 1 1/2 to 2 hours.
Suggestion: Serve with corn and hot rolls. If you have any left-over apples, reheat and serve with vanilla ice cream.
