Moa (Chicken) Hawaiian

  • 2 – 3 lbs. chicken parts
  • Salt
  • 1 egg, slightly beaten
  • 1/3 c. frozen pineapple-orange juice concentrate, thawed
  • 2/3 c. bread crumbs
  • 2/3 c. flaked cocoanut
  • 1/4 tsp. curry powder
  • 1/4 c. melted butter

Sprinkle chicken with salt. Combine egg and pineapple-orange concentrate. Dip chicken pieces, then coat in a mixture of the bread crumbs, cocoanut and curry powder.

Place chicken in a baking pan, skin side up. Drizzle melted butter over all. Cover and bake in a preheated 350 degree oven about 1/2 hour.

Remove cover and bake another 1/2 hour, or until browned and tender. Serves 6.
