Miso Stuffed Fish

  • 2-3 lb. opakapaka, uhu
  • ½ cup miso
  • ½ cup sugar
  • ½ cup green onion
  • 1″ ginger root (grated)

Mix together all ingredients and stuff into liberally garlic salted fish. Place a strip of bacon on both sides.

Lay fish on ti leaves and wrap with heavy duty tin foil.

Cook over hibachi about 10-15 minutes on each side or bake in a 350° oven for about ½ hour or until done.
