Microwave Chinese Chicken Salad

  • 1 lb. chicken breast
  • 1 head lettuce, cut in ½” strips
  • 3 stalks celery, slivered
  • 1 can La Choy chow mein noodles
  • 2 T. slivered almonds
  • Garnish with green onions, cut in slivers

Cook chicken breast for 2-3 minutes on High. Debone meat–shred.

Dressing:

  • ¼ cup sugar
  • 6 T. white vinegar
  • 2 t. salt
  • 1 t. pepper
  • ¼ cup sesame seed oil
