Lauya (Filipino)

  • 3 quarts water
  • 3 lbs. chicken, disjointed
  • 2 lbs. short ribs of beef
  • ½ lb. lean salt pork, sliced
  • 2 spicy sausages
  • 4 whole carrots, peeled
  • 2 cloves garlic, minced
  • 4 green onions
  • 4 whole onions, peeled
  • 4 tomatoes
  • 1 small yellow squash, peeled and diced
  • 1 green pepper, chopped
  • 4 potatoes, peeled
  • 1 small cabbage, cut in eights

Bring the water to a boil in a large saucepan. Add the chicken, beef and pork. Cover and cook over medium heat 1½ hours. Add the sausages and carrots, and cook 30 minutes. Add the garlic, onions, tomatoes, squash, green pepper, potatoes and cabbage. Cook 30 minutes or until potatoes are tender. Taste for seasoning. (No salt is specified in the recipe because of the salt pork and sausage; you may or may not need to add salt.) Remove meats and arrange on a platter. Surround with vegetables. Serve soup in deep bowl. Serves 8 to 10
