Kalua Pig
- 3 – 4 lb. Boston Butt
- 1/3 bottle liquid smoke or 4 Tbsp. liquid smoke
- 2 Tbsp. Hawaiian salt
Score pork on all sides about 1/4 inch deep and 1 inch apart. Rub Hawaiian salt and liquid smoke on all sides. Wrap in ti leaves. Pot Roast: Pour water in the bottom of the pan. Steam for 4 – 5 hours. Check the water occasionally and add more if necessary. Oven Roast: Wrap the butt in tin foil and place it in an open roasting pan. Bake in the oven at 450 degrees F. for 1 hour and reduce heat to 400 degrees F. and continue baking for 3-4 hours.
