Hot Chicken Salad

Yield: 6 to 8 servings     Temperature: 350 degrees.     Time: about 25 min.

  • 2 cups diced cooked chicken
  • 2 cups diced celery
  • 1/2 cup blanched, coarsely chopped, salted almonds
  • 1/3 cup chopped green pepper
  • 2 tbsp. chopped pimento
  • 2 tbsp. minced onion
  • 1/2 tsp. salt
  • 2 tbsp. lemon juice
  • 1/2 cup mayonnaise
  • 1/3 cup grated Swiss cheese
  • 3 cups crushed potato chips

Blend chicken, celery, almonds, green pepper, pimento, onion, salt, lemon juice and mayonnaise.

Turn into buttered 1 1/2 quart casserole and top with grated cheese and crushed potato chips.

Bake in moderate oven, 350 degrees, 25 minutes, or until cheese is melted.
