Yashi No Awayuki

  • 1 stick kanten (white)
  • 1/2 cup water
  • 1 pt. coconut milk
  • 1 1/2 cups sugar
  • 1 egg white
  • Few drops green coloring

Rinse kanten in cold water squeeze dry. Add the water and let soak for about 15 minutes. Add coconut milk. Cook over medium fire until kanten is dissolved. Add sugar and cook until sugar is dissolved. Remove from stove. In a big bowl, beat egg white until stiff. Pour kanten syrup over egg white thru wire strainer, little by little, beating constantly. Add few drops green coloring and beat until blended. Pour into desired pan 8″ x 8″ or individual molds and cool.
