Yambilee Bake

  • 4 medium size yams, cooked, peeled and quartered, or 1 can (1 lb.) yams, drained
  • 1/2 cup seedless raisins
  • 1/4 cup chopped almonds
  • 1/4 cup flaked coconut
  • 1/2 tsp. ginger
  • 1/4 cup lemon juice
  • 2 tbsp. melted butter or margarine
  • 1 tbsp. grated lemon rind

Arrange yams in greased shallow baking dish. Combine raisins, almonds, lemon rind, coconut and ginger; mix well. Arrange over yams. Combine lemon juice and butter or margarine and pour over yam mixture. Bake in moderate oven (350º) 25 minutes.
