Filipino Coconut Candy

  • 3½ cups brown sugar
  • 4¼ cups grated coconut
  • pinch of salt
  • ½ cup water
  • 3 tbsp. flour
  • 1 tsp. vanilla

Make syrup with water and sugar, boil for 10 minutes. Add grated coconut and cook over medium heat for 45 minutes. Add salt. Sprinkle flour over mixture and cook for 5 minutes. Add vanilla and stir; cook for another 5 minutes, pour in a platter and flatten with spoon. Chill for 15 minutes, cut in squares and serve.
