Peanut Brittle

Place in an iron skillet and cook to soft ball stage (230°):

  • 1 cup light corn syrup
  • 2 cups white sugar
  • ½ cup water

Then add 2 cups of raw peanuts or 1 can salted peanuts (8 oz.) Stir and cook to crack stage (301° to 302°). Take off stove and stir in until blended:

  • 1½ tsp. vanilla
  • 2 tsp. baking soda
  • 1½ tbsp. butter

Pour immediately into cookie sheet. Let cool. Break up with hands.
