Eggplant ‘N Spam Tempura

  • 4 long eggplants
  • 1 can Spam
  • Oil for frying

Batter:

  • 1 cup cornstarch
  • 1 cup Bisquick
  • 1 tsp. salt
  • 1 cup water
  • 1 egg

Cut eggplant into 3-inch lengths; slice each piece in lengthwise halves but not quite through so that eggplant remains attached at bottom. Cut Spam into 1/4-inch slices and then in half, lengthwise. Place Spam slice in eggplant and fasten with toothpick. Combine cornstarch and other dry ingredients; beat egg and water. Combine both and stir until ingredients are blended together.

Dip eggplant into batter and deep fry in oil heated to 365º until golden brown. Remove toothpicks and serve with soy sauce.
