Duck Peking

  • 1 duck (3½ lbs.)
  • ½ cup shoyu
  • 3 tbsp. honey
  • 3 tbsp. brown sugar
  • ½ tsp. 5 spice
  • 4 cloves garlic

Mixture:

  • ½ cup shoyu
  • 2 tsp. sugar
  • ½ tsp. garlic juice
  • ½ tsp. ginger juice

Combine shoyu, honey, brown sugar, garlic and spice, and pour into body and neck cavity. Rub skin with honey, shoyu and 5 spice. Place duck breast down on rack in shallow pan and base with mixture. Bake in 325 degrees oven for an hour. Turn duck over and rebaste and let brown.
