Country Fried Chicken

Mrs. Anne Branco – Holomua

  • 1 large fricassee chicken
  • 1 med. onion, sliced
  • 2 c water
  • salt

Have chicken cut-up for serving. Place chicken, onion, water and salt in kettle and simmer slowly until tender. Drain well, then dip in batter and fry in deep fat until golden brown. Drain on paper.

Batter:

  • 1/3 c flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • Dash of paprika
  • 1 c milk
  • Dash of Tabasco sauce

Sift together flour, baking powder and salt. Beat egg well and add paprika, milk and tobasco sauce. Combine all ingredients together and beat well.
