Chicken Cacciatore

- 3# chicken
- ½ c olive oil
- 1 med. onion
- ¼ tsp red pepper
- 1/3 tsp black pepper
- 1 T chopped parsley
- 2 cloves garlic
- 1 bay leaf
- 1 small glass wine
- ¼ c tomato puree
- 1 c mushrooms
- 1 green pepper
Cut chicken in serving pieces, brown in olive oil over low heat until golden brown.
Add sliced onion, red and black pepper, parsley, sliced cloves of garlic and bay leaf. Cover pan and let it all cook for 10 minutes. Add wine and simmer for 15 minutes.
Add tomato puree, mushrooms, green pepper and let cook for 20 minutes longer, slowly. Serve hot over cooked spaghetti.
