Cookie’s Chicken Curry

- 1 tart apple, chopped
- 1 onion, chopped
- 1/2 lb. fresh mushrooms, sliced
- 2 tablespoons butter
- 1 can mushroom soup
- 5 tablespoons curry powder
- 1 cup cream
- 3 tablespoons coconut
- Salt
- Paprika
- 6 chicken breasts, skinned
Saute apple, onion, and mushrooms in butter. Add undiluted soup, curry, cream, and coconut. Sprinkle salt and paprika over chicken. Place chicken in shallow buttered baking dish. Pour sauce over chicken and bake uncovered at 350 degrees for 1 1/2 hours. Serves 4. Sauce is also good over pork chops. Freezes well.
