Chuck Wagon Casserole

  • 1 green pepper, chopped
  • 2 onions, chopped
  • 2 Tbsp. shortening
  • 1 lb. ground beef or ham
  • 3 1/2 c. tomatoes (No. 2 1/2 can)
  • 1 can tomato sauce
  • 1 can mushrooms + juice
  • 1 tsp. salt
  • Pepper
  • 1/4 lb. American cheese grated
  • 8 oz. pkg. uncooked noodles

Lightly saute green pepper and onion in shortening. Push vegetables aside. Saute meat, combine meat with pepper and onion. Add tomatoes and sauce; mushrooms; salt; pepper. Sprinkle noodles over top. Cover, bring to a boil over full flame. Turn flame to simmer. Cook 45 minutes to 1 hour. Stir once or twice during that time. Sprinkle cheese over top before serving. Garnish with chopped parsley. 10 servings.
